Pasta recipes from Italy. Some of these recipes are in their original form or have been inherited from Italian friends and relations. Some have had my own personal touches added.


Spaghetti alla Carbonara

 

 

 

 

 

 

 

 

 

 

Ingredients
500g dry spaghetti
150g piece of smoked pancetta (rind and fat removed)
2 tablespoons of extra virgin olive oil
4 tablespoons of finely chopped flat leaves parsley
3 eggs
4 tablespoons of freshly grated Pecorino Romano
salt and pepper to taste

Method
1. In a large saucepan, bring 4 litre of water to the boil with 3 tablespoons of salt. Cook the pasta in the salted boiling water until al dente.

2. In the meantime, cut the pancetta into short little strips about ½ cm wide.

3. In large frying pan or a wok, over a medium heat fry the pancetta in the oil for approx 5 minutes until golden and crispy. Stir occasionally and once ready, remove from the heat and set to one side.

4. Whisk the eggs in a bowl with ½ of the cheese. Add in the parsley and plenty of black pepper.

5. Once the pasta is cooked, drain well and tip into the pan with the pancetta. Pour over the egg mixture and toss together well. (The heat from the pasta will be sufficient to cook the egg enough for a creamy and moist texture).

6. Season with salt and pepper and serve immediately with a few sprinkle of the remaining cheese on top.

Spaghetti Al Tommaso

(Spaghetti with Roasted Red Peppers and Smoked Pancetta)

I have named this dish after my son Thomas (Tommaso in Italian) to commemorate an important turning point in his life. After starting school and being influenced at the lunch table by his friends, Thomas became a 'fussy' eater (considered a disaster to an Italian father!) choosing to dislike many things that up to then he favoured; in particular he took a dislike to red peppers. Years later at the age of eight he was offered a bowl of pasta made to this recipe, which includes a gently sautéed puree of roasted red peppers - that was it, he was on the road to recovery! Having devoured the entire bowl he stated that this recipe was to be added to his list of Top 10 pasta favourites. Papa's a very happy man now!
I can safely say that this is also on the Top 10 list of pasta favourites for our entire family, all our friends and definitely one to try.

Ingredients:   Red peppers (very ripe and sweet), pancetta, extra virgin olive oil and cream

Pasta choices:   Spaghetti, Spaghettini or Bavette
