(Spaghetti with Roasted Red Peppers and Smoked Pancetta)
I have named this dish after my son Thomas (Tommaso in Italian) to commemorate an important turning point in his life. After starting school and being influenced at the lunch table by his friends, Thomas became a 'fussy' eater (considered a disaster to an Italian father!) choosing to dislike many things that up to then he favoured; in particular he took a dislike to red peppers. Years later at the age of eight he was offered a bowl of pasta made to this recipe, which includes a gently sautéed puree of roasted red peppers - that was it, he was on the road to recovery! Having devoured the entire bowl he stated that this recipe was to be added to his list of Top 10 pasta favourites. Papa's a very happy man now!Ingredients: Red peppers (very ripe and sweet), pancetta, extra virgin olive oil and cream
